I had a friend of mine bring me this recipe when we had our little Lola! This is what I will call Chicken/Salsa stew! It was just delicious and my kiddos loved it too! So clean and healthy and I want to share it with you!
3-4 chicken breasts
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 28 oz can petite diced tomatoes-do not drain
1 jar salsa-I use a 24 oz salsa
1 lb frozen corn
Put it all in the crock pot in that order
On high 4 hours
You will know it is done when the chicken is easy to shred. Just grab a fork and shred it up in the crockpot. Then mix it all up!
**Feel free to add some reduced fat cheddar cheese or tortilla chips–just be sure to count in the calories! 🙂
