Cookie Dough Bites

Here is a sweet treat that is a little healthier version of cookie dough so you can eat without all the guilt! My kids LOVE them, I don’t think they last more than 2 hours in our house (yes, I probably have something to do with that too!! Haha!!)

I definitely keep this indulgence in moderation! I could EASILY eat these all day long! (But I won’t!) IMG_2073

 

Ingredients

*2/3 cup raw almonds

*2/3 cup raw walnuts

*2/3 cup raw oat flakes or Gluten Free Oats (see note below)

*1/4 tsp ground cinnamon

*1/8 tsp sea salt

*1/4 cup Agave Nectar

*2 tsp pure vanilla extract

*3 Tbsp cacao nibs or dark chocolate chips

 

Instructions

  1. In a food processor, process almonds, walnuts, oats, cinnamon and salt into a fine meal.
  2. Add the agave nector and vanilla and process to combine.
  3. Next, add cocoa nibs (or chocolate chips) and pulse to combine.
  4. Roll cookie dough balls (about 1 Tbsp each) and place them on a cookie lined pan lined with parchment paper. Place the pan in the freezer for about an hour to firm up. Store bites in a tightly covered container in the freezer.

 

**Raw oat flakes can be substituted for regular rolled oats (or certified gluten free oats, if necessary). If you want this treat to be truly raw, look for raw oats which haven’t been steamed or toasted during processing.
